Στο κέντρο της Αθήνας, οι YSE μετασχηματίζουν ένα μακρόστενο εμπορικό κέλυφος στο delicatessen “Πεντανόστιμες” σκηνοθετώντας μια γραμμική ακολουθία χώρων που με τη βοήθεια αντανακλάσεων συνδέει τη ζεστασιά του ξύλου με την φωτεινή απλότητα του λευκού γύρω από την καθημερινή τελετουργία της τροφής.
Οι «Πεντανόστιμες», ένα delicatessen στο κέντρο της Αθήνας, επαναπροσδιορίζουν την ελληνική πίτα ως φορέα μνήμης, ποιότητας και σύγχρονης γαστρονομικής κουλτούρας. Ο σχεδιασμός αντλεί από τη φιλοσοφία του νέου branding -το χειροποίητο ζυμάρι χωρίς μαργαρίνη που περικλείει εκλεκτές τοπικές πρώτες ύλες- και τη μεταφράζει σε μια χωρική εμπειρία αφιερωμένη στην αυθεντικότητα, την καθαρότητα και την αξία του προϊόντος.
Ο στενός και επιμήκης χώρος οργανώνεται σε τρεις διαδοχικές ενότητες, συγκροτώντας μια γραμμική αφήγηση που καθοδηγεί τον επισκέπτη από τη δημόσια εικόνα προς τον πυρήνα της παραγωγής.
Η είσοδος λειτουργεί ως κατώφλι μετάβασης: ένας ξύλινος όγκος ενσωματώνει τη βιτρίνα–ψυγείο, όπου οι πρώτες ύλες εκτίθενται ως πολύτιμα αντικείμενα, ενώ το στενό πέρασμα–«εξομολογητήριο» φιλτράρει την ορατότητα και σκηνοθετεί μια σταδιακή αποκάλυψη του εσωτερικού.
Στον κύριο χώρο, η υλικότητα αποκτά πρωταγωνιστικό ρόλο.
Οι χαραγμένες ξύλινες επενδύσεις, το μάρμαρο Νάξου, οι ασοβάτιστοι τοίχοι με τα προσεκτικά διατηρημένα ίχνη του παρελθόντος και οι χαραγμένοι καθρέφτες που διασπούν την αντανάκλαση, συνθέτουν μια ατμόσφαιρα λιτής πολυτέλειας.
Το προϊόν παραμένει διαρκώς στο επίκεντρο, ενώ οι αντανακλάσεις, οι υφές και το φως ενισχύουν τη βιωματική διάσταση του χώρου.
Στο βάθος του καταστήματος, κάτω από το πατάρι, ένας φωτιζόμενος όγκος από μεταλλικό σκελετό και αμμοβολημένο γυαλί στεγάζει τον χώρο προπαρασκευής — μια «κρυφή εστία» από όπου αναδύονται αρώματα και κινήσεις της καθημερινής παραγωγής.
Το σκούρο μπλε, σε συνδυασμό με τη θερμότητα του ξύλου, τα γύψινα προφίλ και τα παιχνίδια των καθρεφτών, διαμορφώνει μια αίσθηση ηρεμίας και σχεδόν τελετουργικής οικειότητας μέσα στον πυκνό αστικό ιστό της Αθήνας.
Δύο έργα του ζωγράφου Παύλος Χαμπίδης δημιουργήθηκαν ειδικά για τον χώρο, ενισχύοντας τον διάλογο ανάμεσα στην τέχνη, την υλικότητα και τη γαστρονομική εμπειρία.

In the heart of Athens, YSE is transforming a long, narrow retail space into the “Pentanostimes”, orchestrating a linear sequence of spaces that, with the help of reflections, connects the warmth of wood with the luminous simplicity of white around the daily ritual of food.
Located in the heart of Athens, “Pentanostimes” reinterprets the traditional delicatessen through a contemporary spatial narrative centered on the Greek pie — a food deeply rooted in local culture, collective memory, and everyday ritual. The project translates the values of the brand into architectural form, foregrounding the purity of raw ingredients, artisanal craftsmanship, and a commitment to quality. At the core of the concept lies the dough itself: free from margarine and enveloping carefully selected local delicacies, it becomes both material reference and spatial metaphor.
The narrow, elongated footprint of the shop informed a linear spatial sequence divided into three distinct zones, orchestrating a gradual and immersive experience for the visitor.
The entrance operates as a transitional threshold: a sculptural wooden volume that incorporates the refrigerated display of raw ingredients, presented almost as curated artifacts. Alongside it, a compressed passage — conceived as a “confessional” — acts as a visual filter, delaying full exposure to the interior and heightening the sense of discovery.
Beyond this threshold, the main space unfolds through a carefully balanced composition of textures and materials.
Engraved wooden refrigerator claddings coexist with surfaces of Naxos marble, exposed untreated walls bearing meticulously aligned traces of past electrical installations, and engraved mirrored panels that fragment reflections and subtly distort perception.
Together, these elements establish a restrained yet refined material language, allowing the products themselves to remain the focal point of the experience.\
At the rear of the shop, beneath the mezzanine, a luminous volume constructed from a metal framework and sandblasted glass accommodates the preparation area. Internally illuminated, this “hidden hearth” introduces an atmospheric layer to the project, suggesting the unseen process from which aromas, textures, and flavors emerge.
The chromatic palette is anchored by deep blue tones that evoke trust, serenity, and permanence.
Combined with the warmth of timber, the reflective interplay of mirrors, and delicate plaster moldings, the interior acquires an almost ceremonial character — transforming the compact retail space into a contemporary sanctuary dedicated to taste and craftsmanship.
Specially commissioned artworks by painter Pavlos Hambidis complete the spatial composition, reinforcing the dialogue between gastronomy, materiality, and art.
Through a restrained architectural vocabulary and a meticulously choreographed spatial experience, “Pentanostimes” elevates the everyday act of purchasing food into a multisensory ritual. The project balances familiarity with refinement, tradition with contemporary expression, ultimately redefining the delicatessen as a space where craftsmanship, memory, and atmosphere converge.
